Spotting in Amsterdam

Hello guys,

I will be in Schiphol for a day of spotting next week. I am somewhat confused with all those runways. Is the new Polderbaan in use next week? What kind of aircraft can I expect there?

I have already seen some great pictures from the observation deck. Does it also make sense to take pictures of airplanes landing & taking off? (I use a 323mm lens.)
