The 740/750 are the most up-to-date Olympus in the C-700 family. The improvements are a more slimmer & lighter body (personally I like the older C-700s because there was more of the camera body to grip onto but that's just me) and ED (extra-low dispersion) lens to reduce "purple fringing". The 750 has an all-metal body and a hot shoe for external flash attachment and higher megapixels (4mp vs. 740's 3.2mp) which the 740 lacks, hence the price difference. I consider the C-730 to be fairly new and maybe a cheaper alternative over the C-740 as the major difference btw. the two is the ED lens on the 740 which the 730 lacks. 730 does however support both Smart Media cards and xD memory cards while the 740 only uses the xD cards. Ultimately, the best way to find out which model you like would be a visit to your local camera shop.
