At the risk of sounding too domestic,
I thought it might be fun to share a quick-and-dirty recipe. We have people on this forum from all parts of the world, thought it might be interesting to see what pops up...
Mind you, I am not a cook but my wife does so pretty well, and I have my moments.
This is good for a lunch, or even dinner (as we did this evening). All you teens still living at home, surprise your parents.
They'll be impressed with your effort. Total cost should be in the $10-12 USD range, depending on your choice of toppings.
Easy Tortilla Pizzas

Ingredients:
1 package round flour tortillas (soft)
1 can tomato sauce
1 package cheese (mozzarella or Italian mix)
Your choice toppings:
pepperoni
italian sausage (fresh, find in meat department)
onion
green pepper
0) preheat oven to 350 degrees F (not sure on the Celsius conversion)
1) place tortillas on a flat baking sheet
2) use a fork to lightly poke the tortillas across their surface- this helps to prevent "bubbling" and cracking later on. DO NOT SKIP THIS STEP! You do not need to poke holes all the way through, rather just make "indentations" spread across the surface.
3) place sheet with tortillas in oven for approximately 5-10 minutes, or just until the edges begin to brown. Remove from oven.NOTE: this takes some guesswork- if you leave them in too long they will get too crispy, and if not long enough the finished product may have a tendency
to "fall apart" as you eat it. In other words, the crust will be too soft.
4) spread tomato sauce evenly on tortilla, leaving a little "crust" around the edges.Add a layer of cheese, as thick as you would like. Then layer other toppings, starting with pepperoni, then sausage, etc. Do not add large gobs of sausage, small pieces will cook better and are more than enough. Thinner=cook better. Last but not least, add another thin layer of cheese.
5) place sheet with tortillas back in oven, bake for approximately 20 minutes or until cheese begins to brown slightly. Remove sheet, cut
using pizza cutter. Crust should be slightly crispy around edges.
You could probably substitute a pre-made (or home-made) pizza sauce for the tomato sauce, but we haven't tried it as Diane (my wife) likes these with the tomato sauce.
