The ultimate shooting opportunity airplane to airplane would be from a B-17 bomber in my opinion 
Those windows are large as heck everywhere on the bird.. if you're crazy and short you can also take the gunnery pod underneath and PRAY they don't have to make a wheels up 
If anyone wants to see my inflight video of a B-17 click on airshutter.com.. unfortunately no other plane flying in formation though.. but a previous flight had an Avenger fly next to her.. was quite a sight even from the ground.
