Fuel burn and Simulation Rates....

Hey all, its your computer illiterate buddy frogman with another stupid question..... On previous versions of FS, you could always select the tank you want to burn fuel out of (I.E. Center on a 737) I cant find a selector for it.... also theres no simulation rate button.(clock) did I get a bad install or is it the way it is? ( I know you can change rate by hitting alt. and all that garbage)

dont know about the fuel burn, but for sim rates, it under Options.
