Does any real-life airline use a 767 on short range hops between say for example, Stansted to holland/germany etc??? just curious having done so in fs2004, I think it might be unrealistic!

Yes. In Japan they do, All Nippon Airlines. Of course they use the 747 for high capacity city hops also, and even the 777. As far as Stansted, it appears the only 767 out of their consistently is UPS to Louisville. The largest passenger flights appears to be BAW 747 flights to Frankfurt and Cologne. All the rest are 737's, A319's and 320's, Dash 8's and FedEx MD-11's.

It was quiet common in the 1990s to see Boeing 767s of British Airways doing very short scheduled flights between London and Paris for example.

In the U.S. the 767s are often used on short domestic hops, (some as repositioning flights, but due to the geography of the nation, it is also easy to do so as regularly scheduled flights). A prime example would be that of Delta. Before the retirement of the 767-200s as well as before massive influx of smaller aircraft from the NW merger, PBI would often see 767s running routes to ATL. FLL still sees healthy amounts of 767s doing the runs to ATL as well. IIRC, MCO also gets 767s on the MCO-ATL routes.
As for AA, the 767s seldom still do, but have occasionally been seen doign the MIA-MCO route. 767s often fly to DFW from MIA.
US has 767-200ERs still in the fleet, and probably end up running some of the routes between PHL, DCA, and CLT.Whatever is necessary, is never unwise.

SAS used their Boeing 767s on short intra-Scandinavian and European flights too . These flights were scheduled between the longhaul services of course.
Aer Lingus operated their (short-lived) Boeing 767s between Dublin and London.
